Sour Tart Ale with Pineapple Puree
Hops: Sabro, Sabro Cryo
Tropic Wonder: Pineapple, is the first part of our kettle sour series. Each beer will feature a different pilsner malt, a fruit, and a single hop. The idea is to highlight a tropical hop flavor, with a fruit puree, and a different base pilsner malt to balance each. Our first installment of this series is pineapple puree with Sabro hops. Sabro hops have strong notes of tropical fruit and coconut. Along with 176 pounds of pineapple puree this tart ale resembles that of a tart Pina Colada!
Hazy Sour Milkshake IPA with Strawberry Puree and Lactose
Hops: Mosaic, Mosaic Lupomax
Tropic Wonder: Strawberry is our second installment to
our kettle sour series, which is a hazy sour IPA. This time we start with a
base of premium pilsner and pale wheat to give it a low color pickup
and nice fluffy body from the wheat. Then we dry hop with 220 lbs of
strawberry puree and 3 lbs/per/bbl of Mosaic and Mosaic Lupomax hops for a huge mixed berry charge of flavor. This beer has massive notes of strawberry with a silky-smooth finish from the addition of lactose (Milk sugar) in the boil. Lastly, it rounds out with a slightly tart finish to fully encapsulate you on a fruity journey of goodness
Hazy Sour IPA
Tropic Wonder: The next installment of our Tropic Wonder series features mango puree, and Citra Hops. We start with a big helping of oats and white wheat malt in the mash that adds a nice fluffy cloud-like body. Then, we use Citra in the whirlpool and dry hop for a nice dose of tropical fruit flavor. The hazy yeast we use adds esters of orange juice and creamy texture to this tropical bouquet of awesomeness. All of that is rounded out by a nice crisp tart finish sure to leave you wondering, “How is this even a beer?!!” Tropic Wonder Mango is perfect for that beautiful San Diego weather!
